The term sweet spreads covers a wide variety of products in which the main ingredients are sugar and fruit. In most cases, the product has undergone a concentration process to obtain the desired final sugar level. The following table summarizes the range of products and typical total solids range. For convenience, honey has also been included in this category. |

Today, an increasing proportion of the market is dedicated to specialty products for which the range of total solids may vary from 25-85% weight/weight. Jams with the lowest total solids tend to be specialized diet products, whereas there is a need for higher solids levels in baker or confectionery jams.
